I didn't have any bread in the house and popped downstairs to Aldi to get some fresh bread. While I was there I saw some carrots and decided to make some carrot soup.
Method
- Peel and slice the onion
- Wash and slice the leek into thin rings
- Peel the carrots and slice them into 1/8" rings
- Heat the oil and butter in the pan
- Add the onions, leeks and carrots and stir until gently glazed
- Add the vegetable bouillon powder and stir
- Add the tomatoes and stir
- Add the water, bring to boil and simmer with lid just ajar for 40 minutes
- Take pan off the heat and leave with lid on for 20 minutes
- Blend soup with stick blender, leaving some whole pieces of carrot for texture
- Taste and season with white pepper as required
I use lots of fresh ground white pepper and serve it with the fresh bread I went out to buy in the first place.
