I didn't have any bread in the house and popped downstairs to Aldi to get some fresh bread. While I was there I saw some carrots and decided to make some carrot soup.


Method

  • Peel and slice the onion
  • Wash and slice the leek into thin rings
  • Peel the carrots and slice them into 1/8" rings
  • Heat the oil and butter in the pan
  • Add the onions, leeks and carrots and stir until gently glazed
  • Add the vegetable bouillon powder and stir
  • Add the tomatoes and stir
  • Add the water, bring to boil and simmer with lid just ajar for 40 minutes
  • Take pan off the heat and leave with lid on for 20 minutes
  • Blend soup with stick blender, leaving some whole pieces of carrot for texture
  • Taste and season with white pepper as required

I use lots of fresh ground white pepper and serve it with the fresh bread I went out to buy in the first place.
